Limestone is good stuff. Is the stone you have access to
silverdale (soft, chippy, sometimes crumbly with pock
holes, but it can be very nice) or cottonwood (harder,
more brittle, very durable, but you can't do very much
undercutting). Both are very nice looking stones.

http://www.sculpt.com. Last I looked they had a pretty
good collection.
