We're still using fvwm with our Sun Rays just because it's fairly lightweight. I've played with Gnome a bit and it seems to assume that it has 2 or 3 GHz available to each user just to run the desktop, and I fear that it would seriously bog down our Sun Ray servers, which are Sun Blade 100 boxes.
