Just to give a bit more info, I'm looking at the Sessions tab in the Admin GUI. The column "Unix ID" is blank and all sessions show up as under the "Login Greeter/Idle Sessions", rather than the User Sessions. Once the Kiosk is launched or once a user has logged in to a Non-Kiosk session, shouldn't the session move from the "Login Greeter/Idle Session" list to the User Sessions list? Also, even when I'm logged in through the DTU, running utwho doesn't return anything.

Any ideas?

No, this is normal.  Try utwho.

The "user" in utdesktop is the name that might have been registered if you registered that Sun Ray client. Most people don't register desktops, it's not a very useful feature (unless you want to put annotative information in the otherInfo field to help specify the nearest printer or something like that and then leverage it with custom scripts).
