I'll have to wait for one of our Kiosk experts to comment on the idle
session issue.
If sessions are marked "idle", they only show up with "utwho -a".

No, this is normal. Try utwho.
The "user" in utdesktop is the name that might have been registered
if you registered that Sun Ray client.
Most people don't register desktops, it's not a very useful feature
(unless you want to put annotative information in the otherInfo field
to help specify the nearest printer or something like that and then
leverage it with custom scripts).
