I use the Adesso RF keyboard/touchpad keyboard for my big-screen Sun Ray and media PC at home and love it. Because it's all-in-one there's no mouse to hide in the sofa cushions, and swapping the usb dongle between the Sun Ray and PC is seamless.
I would highly recommend using RF instead of IR for your remote keyboard and mouse. There are several companies now making all sorts of RF keyboards and mice, and as of yet I've had no issues using many different types with the Sun Ray.
