Choosing that should be all that's necessary to scan without using another application. I think the CD also installs Presto PageManager as well. In addition photoshop plugins are also installed , I believe. The printer and modem choices in the modem control panel are for choosing which port your modem is attached to. The 610 is a SCSI scanner and is hooked up to neither one of those ports.
I've loaded VueScan and VistaScan 3.75, But in neither
case does the program find the scanner even tho the
Apple Profiler does. Someone once told me something
about a control panel (modem?) where you had to select
"remote" instead of "modem" or "printer." However, my
modem control panel only lists "modem" and "printer,"
not "remote," so I have no choice. What am I missing?

You can scan from the desk accessory, as I mentioned, or from Photoshop via the "IMPORT" selection in the file menu. I haven't used Presto for a while but I think scanning is accomplished from the file menu there as well. The 610 works pretty well, I think. I just picked up another one today.
If the installer didn't "scatter" plugins around where needed, you may not have done the install in the recommended order. For this to happen, the graphics software has to obviously be installed before the VistaScan software is. Good Luck. Let me know if you have other questions.
