Is your CPU overclocked? It could be that activities that cause more CPU activity push it over the edge. iTunes is a clue in that direction. I have a 220 MHz G3 which was overclocked to 315 MHz and from my testing and a couple years of occasional use, I thought it was stable at that speed. I recently couldn't complete a backup with Retrospect and finally tracked it down to the CPU. I bumped it down to about 303 MHz and everything is fine now.
