I have a S900.  Currently it has a ATA133 Sonnet card (Recommended) but
boots from the internal 2gb SCSI.
My 900 is on a Sonnet 450mhz G3 card  and is running Jaguar. 
NOTE:  Before I got the ATA card I was running a AHA2940 PowerDomain
SCSI card with a couple of 18gb 68pin SCSIs
NOTE2:  Any drive on the  AHA2940 WILL NOT BOOT INTO OS X PERIOD! But...
they WILL work as secondary drives under X on SOME machines.  I say
"some" because I have seen them work in  a Power Tower Pro,  Once in a
8550 WGS, not in a Powerbase. It does in a Umax S900, did in a 7500, did
not in ANOTHER 7500.  As you see, no rhyme /reason here.
In all cases though on the  Umax S900 or any other machine I was using,
I was booting from the internal SCSI so in answer to the question:  Yes
OS X works on SCSI,  but it doesn't particularly like it.....
