Derryck, 
There are well known issues with the Crescendo 700 and
800 mhz cards with OS X.  I was told that Sonnet has
corrected the problems with their newer cards.  It
seems that judging from your post, that they haven't. 
A couple of things that you can try:

Order a 128 meg NON-EDO 5v FPM dimm from OWC.  Remove
all of your RAM and install the new dimm in a slot. 
Try booting with the non-EDO memory only.  I've been
told that EDO is a bit slower than non-EDO memory. 
That may be causing a problem. 

Definately install any Sonnet software that they
suggest to install.  The fix for OS X may be in the
software.
 
I can tell you that my S900 is rock solid with an XLR8
zif carrier card (www.xlr8.com) and a Powerlogix 900
mhz G3 zif.
