No, our supported build configurations are Browser only, Browser +
Composer and Browser + Composer + Mail. This is because most of the
Composer files are required by message compose.
If you want to make your own build, you could try hacking
editor/ui/jar.mn and removing all the overlays in the MOZ_SUITE block.
If you don't want to make your own build, you could try writing an
extension that would override the overlays with a dummy XUL file. But
users could then disable it and get Composer back.
