While I know you have your reasons, I personally have never seen the
need to add such inline 'headers' to a Reply. I feel that the recipient
(the sender of that content) should know what he sent, and when.

You live a simple life and correspond with people who also live a simple life! Unfortuantely, I and the recipients of my emails are often discussing more than one subject, the subject may be updated, the recipients changed, the emails might be a week or two apart, or the emial might even branch. So, it helps everyone if they see the date, time, author, AND subject that each email is replying to.
