The Archive feature allows you to set up an archive of your messages, rather than deleting them. When you want to archive a message, just press <Shift>-<A>. It's also in the Message menu and right-click menu.
For Archiving preferences and to disable it, go to Edit-->Mail_&_Newsgroups_Account_Settings-->Copies_&_Folders.
