Aha! Breakthrough on this one! I've just managed to successfully create a working Unity launcher for SM by using a text editor to write the following file called "seamonkey.desktop" in /usr/share/applications:

[Desktop Entry]
Version=1.0
Name=Seamonkey
Comment=UnityLauncher
Type=Application
Categories=Browser;Email;
Exec=/usr/local/seamonkey/./seamonkey
Terminal=false
StartupNotify=true
Icon=/usr/local/seamonkey/chrome/icons/default/default48.png
Name[en_US]=Seamonkey

After saving this and rebooting, A Seamonkey icon now appears in Dash Home which successfully opens Seamonkey, and a copy of it can be dragged into the Unity launch strip on the left of my screen,

One problem down and one more major one (getting SM to recognise my adobe flashplayer) still to go!

4. Although I have Adobe Flash Player installed and it's working
fine on Firefox, I'm getting a prompt to install it whenever I try
to view pages with video content on SM.
