Good warning, but it isn't entirely true.  Value lists merely store data
in text strings (i.e. words) so that when you check an item in a check
box formatted field (or select an option from a popup menu field),
filemaker places that text string in that field.

When you delete a value from a value list, that data (the text string)
remains in the field.  It isn't deleted, but it is often hidden.  What
happens is you can no longer search for that value in the usual way. 
You could still search for that text string and find it, but that
doesn't work with checkbox formatted fields (such as the affiliations
and email lists).  With these fields, that record won't have the
checkbox marked (after all, that checkbox no longer exists) but it will
still have the text string.  Thus, if you were to re-add the value to
the value list, voilla, the box is checked.

With popup formatted fields, the text remains in the field box but you
obviously can't search for that value using the popup list.  

Try this all out.  It's a good thing to remember.
