In general no...not easy to do any more. Depends on how old your SIM card is and how old the firmware is on your phone.
I own only Nokia phones so I can speak for them but I think the case holds true for many of the T-Mobile branded phones that are being sold today. In the last few years T-Mobile introduced SIM cards which contained EONS technolgy. Enhanced Operator Naming Service. This forces the phone to display any number of variations of "T-Mobile" or "TMO" etc. The overwriting of these operator logos for the most part is not possible anymore unless you have an older T-Mobile or Voicestream SIM which was not EONS. You can try over writing the logo with software or sending one via SMS but chances are it will not work. There are exceptions however. I have been able to do it on my 3595, 6610 and 6590i by doing a few tricks involving activating the PIN request code and EFR (Enhanced Full Rate) speech codec.
