For the same reason people change their themes, ringtones, and anything else that can be customized: for some people life's more interesting that way.
The "T-Mobile" doesn't really bother me, and I can understand how knowing the network name on a minute-by-minute basis is helpful if you're, say, roaming a lot, but in my case it never reads anything other than T-Mobile (even when I travel). So it doesn't seem like it "deserves," so to peak, such a prominent place. It'd be more useful (to me) to put my phone's profile name, or if you and your spouse had the exact same phone, your own name or something else there.
