I don't use IMAP, so can't help with that. I read somewhere that the "[Gmail]/All Mail" folder is an extra copy of all the messages in all other folders, so not synchronising that folder halves the amount to download. (This is because Gmail's IMAP folders equate to "Labels" and every single message carries the "all mail" label, IIRC.)
