The simpliest is Hamster
(http://home.t-online.de/home/juergen.haible/)

I use it as SMTP, POP and NNTP proxy and I'm quite happy. The
only thing you have to do is to switch to other preferred smtp
relay as you enter the Net through different route. Mercury has
more features but it is better for permanent connection IMHO as I
failed to control it behaviour manually:(
