I imagine boiling the grog will disperse the alcohol, or they can have another 
salad if they feel that hasn't happened.

Sounds pretty good!  I may even have some rum stashed in my cupboard from some 
work event, though it might not be coconut rum.

Could that be coconut-ified by adding coconut to it, or soaking coconut in it?

Do you have approximate cost/pp, or cost for say 10ppl?

Tried my recipe tonight, it turned out better than I expected.

Pineapple chunks
Shredded coconut
Hatch chili (diced)
Oranges (segmented)
Black beans (from a can, rinsed)
Jicama
Coconut grog (3 parts water, 1 part coconut rum, white sugar, lime juice)


Put all ingredients except grog into a bowl. Boil grog 5 minutes or until it 
starts to get slightly syrupy. Pour grog over fruit. Refrigerate. Voila!
