Do you mean the "/" as a submenu, or as a "or/and" ? I can't find in
either case.

I have Access Connections (AC) v. 5.61 compilation 81CX33WW. There is a
"basic" and a "advanced" mode (the translations may not be exact). 

I use the advance mode. 

When I open a connection profile, there are 3 tabs :
"General parameters", "Wireless parameters", and "Supplementary
Parameters".

The only place I see mention of MAC address recording is not in a given
connection profile, but in the "Tools" tab of the main AC window. It's
the green button "Location Changing" (right column, topmost).

There is a "Modify saved ports" at the bottom of the window". But when
you click on it, it appears to apply only to Ethernet cards (indeed, AC
prompts me if I want to "save the connection" or something only when I
plug a Ethernet cable. Further more, you have to check "automatic" at
the top of the window. I think this is something else from what I am
looking for. When I export a connection, the MAC of the AP is not in the
text file. 

Did I miss something?

Access Connections can certainly do this.  Edit the connection, look for

wireless settings/advanced configuration.  It lets you enter a preferred
MAC 
for the access point.
