Make sure you have a reasonable collection of clients that *are* running the unstable version otherwise it won't get enough testing, which will just lead to a number of bugs when you copy the "stable" version over; i.e. you get exactly the situation you're trying to avoid. While it's true that doing live changes bothers people, it does shake out all the bugs very quickly... Things don't become stable by themselves.
