In order to have a proper audit and security trail, you MUST account for every change to a table somewhere. Of course you are reflecting the past state using PDF+metadata. But only for the LEGAL BUSINESS DOCUMENTS. You don't need to reflect past state for anything other than that and there is no legal requirement to do so.
