I would say that the student would get an incomplete or be allowed to withdraw without penalty... as others have mentioned, your institution probably has a policy in place on how to deal with this situation.

A projected grade would mean that you project that the student would learn ___ amount if they stayed in the course... but since they aren't in the course they won't actually learn that.

Giving the current grade says that the rest of the course isn't important and wouldn't impact the grade even if they did stay.
