I share Stephen Black's view that there are no very persuasive explanations for contralateral organization of nervous systems.  That said, I'll add another implausible one that I've come across:

    When you get whacked in the right side of the head, you are being attacked from the right, and so you need your right-sided limbs for defense.  Therefore put the controls for the left over there.
