I have my students turn in 5 of 6 reaction papers over the topic (or 
topics) of their choice spread out over the course of the semester.  

Also, I have an e-mail discussion list set up where students can 
discuss whatever they'd like regarding the content of the course.

Both have been excellent ways for me to see what students are getting 
out of the course.  

And sometimes they tell me in person.  =)
