How about the old "ask them to describe themselves" exercise, and have
students take notes on whether those in the western/individualistic cultures
describe personality characteristics ("I'm funny, good at math, etc.") and
whether people in eastern/collectivist cultures are more likely to describe
themselves in terms of family/social relationships ("I'm a daughter, a
sister, citizen of...")?  This could be done when members of the group go
into the cities and towns for lunch or coffee, or any time there's
interaction with the natives of each place.
