Biggest success I have in a situation like that is to do a series of visual 
illusions and explain the mechanisms under them as you go.  They really enjoy 
the illusions, and tend to stay really engaged.

Hello All,

A friend of mine has a job interview next week at a large University where a 
teaching demo to a class of 300 is required. If you have any suggestion on how 
to engage a large class who do not know you, and will not see you again, please 
share, and I will pass them on. Most of my ideas take time to work through with 
a class, and would be hard to accomplish in just one meeting.
