Sounds like you are running the server on the Touch itself and not
really using the server on the PC.  Quick way to check it is to see if
music still works if the PC with the server is off.

The server on the touch doesn't require the PC server to be available,
but as the touch is not as powerful as a PC some server features are
disabled, such as web interface.  IF you want to continue this
arrangement you can still download other 3rd party controllers AFAIK
such as the ones that work on mobiles such as iPeng on the iPhone.  You
can also use squeezeplay (beta software) to control your touch from a
PC. SqueezePlay is semi-supported software that basically runs a Touch
on your pc.  (You can also uninstall the server from your PC as you
don't need it in this way of working)

The other option is to use the server on the PC as well as put the
music on the PC (or connect the USB drive to the PC) and then some more
features are available to you such as the web interface and more
plugins.  The disadvantage is that you have to have your PC on to
listen to music files.
