Wrong: The NAS is a computer, and it's running an OS. Squeezebox Server
runs on that OS. Whether conversion is done or not, depends on how you
configure SBS.

Not quite.
1) You can't play music on the iPod's speaker AFAIK (at least that's
not iPeng's primary function). So the iPod won't work exactly like the
Touch, it will work more like the Squeezebox Controller.
2) The interfaces are not identical. 

Other than that, you've got it right.
