Ok have you checked that squeezeboxserver is not still scanning your music ? After the server upgrade.
The WEB-UI can tell you Interesting would be to ssh on to the Ready Nas Duo to see the CPU load (top command) If I remember 7.5.x right in the performance settings is not a possibility to choose a faster way but cruder way to process artwork. And there is a setting to pre-cache artwork during scan I would use that even if the initial scan gets much slower. If you scanned without pre-caching I would suggest a clear and rescan with that option on. I would also try to cue up music with Touch and not having the web-UI open . My thinking is that sbs somehow gets stuck processing artwork on a slower server ? Perhaps you have some albums entirely without artwork to try with ? Also for some reason the Touch is loading the server more than a SB3 especially when handling playlists ( a factor of 20times with a playlist) So I would not have shuffle mode on .
