The only time there might be an issue is if you run the analog outs
directly into a high power amp with DC coupled inputs. These are
somewhat rare so there is not THAT much chance of having a problem. 

The theoretical issue is that at power up or down you might get some DC
on the output which could cause speaker cones to be pushed too far. Not
that putting a cap on the output DOES NOT protect you from power on/off
transients, they only protect from steady state DC. 

If anyone is worried about "safety" issues of taking out the caps, just
find out whether the inputs you are feeding the Touch into are
capacitively coupled. If they are, taking the caps out will give no
less safety.

If for some reason you still want the caps you should use good quality
film caps. Unfortunately they are always MUCH larger than the
electrolytic types so probably won't fit in the Touch. You can usually
get by with much lower value caps. A 1-2uf film cap is probably going
to work just fine in most situations.
