yes, it may take a bit of learning, but not too much. and really not sure about doing things with folders (as although I too have a very organized folder/naming structure, I use tags and SB library for actually browsing, playing, etc.).
But with regards to dynamic playlist: not sure you need to worry about settings (the button next to the plugin in the plugins tab). Instead, in LMS (webGUI), expand "my music", then select "dynamic playlist". one of the options should be /random. Click on this, then you should see the ability to different sorts of random play. and yes, tagging classical is much more complicated!
