you may have mentioned this already, but in doing your test on the new
FLAC files make sure the volume of the TOUCH is at 100% and replaygain
tags are not being used.  

edit: there have been many, many tests of the bit perfectness of the
Touch digital outs over the years (some done in fairly sophisticated
ways)....thus folks (like me) are suggesting other things rather than
assuming that maybe the TOUCH is not outputting bitperfect 16/44.1
files.
