On Android, Google Contacts and some Google Calendar data are duplicated
locally (why not all, I don't know...I wish there was a switch to make it
so).  For Exchange data, you can tell it how long a range you want it to
sync to local.  Beyond that, it depends on the app how it handles on-board
vs in-cloud data.
