LDS doctrines were revealed from the Lord over a period of time, and were not all formulated on "day one". With continued revelation, the restored gospel was brought forth over a period of time.

BTW, it is an intersting exercise to look for a motive for making such a
change, especially when the prophet himself used to teach traditional
