Ramsay definitely has never said that he has "saved" the restaurants for
sure on the program.  He usually says in his closing comments that it is up
to the owners or managers to make sure that they stay on the right track
(and considering on the U.S. version the stubbornness of most of the
subjects--or at least the way they were presented--I'm sure a lot of bad
habits came back).  The episode count doesn't include the "revisited"
episodes, where Ramsay returns to some of the restaurants to see how things
are going.  Generally, they do three or four in those episodes and at least
one of them in each episode seems to have gone out of business.  In the
regular episodes, usually after Ramsay's closing comments is a "since Chef
Ramsay left" segment that has mentioned (if the program was made in time)
if the restaurant closed.

And as even people who don't watch "Kitchen Nightmares" know, the only
restaurant that Ramsay walked out on was the infamous Amy's Baking Company,
which is still in business, probably continues to get business from people
who want to see if it's as bad as it looked on TV--and (allegedly) the
owner's running it as a money-laundering scheme anyway (allegedly).
