The MT8189/MT8371/MT8391 EVK entry names every file individually, so each new device tree include or overlay has to be added by hand and, when one is forgotten, falls through to the catch-all ARM MEDIATEK entry instead.
Replace the per-file lines with globs over the two board name prefixes, and add one for the SoC files. This also picks up several existing files the explicit list missed, and it covers the overlay added later in this series without another entry.
