I'm not familiar with Mutter's fake modes and have only seen evidence of
them in bug reports. They don't seem to ever be listed on my machines.
Perhaps I'm imagining it and instead 2880x1620 was briefly supported at
startup (like 3840x2160x60Hz was according to monitors.xml). And then
both fell off the list of supported modes later as the bandwidth was re-
evaluated.
We should probably query the monitor directly to find out what its
theoretical capabilities are:
sudo apt install edid-decode
cat /sys/class/drm/*/edid | edid-decode
(that will dump the EDIDs of all monitors, not just the LG).
