Tom,

an " air locker " is a locking rear differential, when air is applied it locks
both rear wheels together 100%, good for soft sand or launching ramps, but
since it does not slip it is only used when needed and cannot be left engaged
when driving down the road.

I'm sure it's the synchro tranny, but I don't know enough about this
stuff to be able to identify one transmission from the next. I do
know that it has synchronizers on every gear, and my problem is
exactly what you described. I have had to come to a stop on the road
to "start over" in gear one because I couldn't downshift. I am
getting the hang of it but changing to the Allison has already
occurred to me. What is an air locker?

The biggest concern I have with going to the bigger truck, is that I
had to give up 4WD. The 750 is twice as heavy and has lots more
traction than the 3500 in 4WD, but that being said, it is relatively
light on the rear end (has a flatbed) and I have already spun in some
sand. I think I am going to get a heavy winch on the front (I already
have a mounting plate for it) and that will at least give me some
peace of mind. We all have had the nightmare of our boat AND truck
sliding towards the water on a wet ramp. At least the boat would
  float.

I would love a sleeper like yours has, but I am afraid I would be just
a bit too tempted to start taking naps after lunch and never get
  anything done.
