If you work with Unix and have reasonable shell experience then you're really already over the biggest hurdle. If you're talking about setting up a headless server, they're all pretty much the same. Modern Linux installs are all equally painless, and aside from security updates and backups I'm not sure what sort of administration you intend to do, but I doubt you'll have any problems.
I personally use openSUSE 11, and the primary reason for this is that I strongly prefer KDE.
