FWIW, I use the nx client and server software from here: http://www.nomachine.com/
Free and lets you login to your own session on an ubuntu box. VNC works, but as described above, you have to be logged in as a user before the "share my desktop" vnc setting takes hold. the NX stuff runs as a service so it is available even if no one is logged in. Works well for me, as I am the only user who remotely logs into the ubuntu machine.
