Have you considered ext4? It supports very, very fast filesystem checks.
(wikipedia has a good overview of the improvements in ext4)

Your Ubuntu system will support ext4 and you don't need to play with
journaling options - just format & go. That's the downside though - you
woudl have to reformat your disk. I understand there are ways to convert
ext2/3 to ext4 but I'm unsure how reliable those methods are

FYI I have 2 linux based systems - one my SBS server - with 6 disks
between them all formatted as ext4.
