The cautious advice is usually to give SBS read access only, as a safeguard against a hypothetical bug in SBS that could allow it to damage your library. But I'd have to agree that the risk of such a bug is a lot smaller than the risk of several iTunes users with r/w permissions having free run of the library.
The OP could possibly do something intelligent with groups, though it's hard to say for certain as we don't have those details. But for example, all the iTunes users who have r/w access could be put in an 'itunes' group, and then make 'itunes' the group owner for the music library. Make the permissions on the library 775 for directories and 764 for files and that will give SBS the read-only permissions it needs. For the playlists folder you could make it wide open (777 directories and 766 for files). Or you could be a bit more secure and do something analogous to what I described for the library. Define an 'sbs' group, with user 'squeezeboxserver' as the only member, then make that the group owner for the playlists folder.
