At first you have to mount the block device /dev/xxx to a mount point.

Then you can symlink some files/directories within this mount to
another place.
Or you can use a bind mount to make some folder appear at two places at
the same time. 
I think bind is a little superior to symlinking (some apps refuse to
honor symlinks)

A bind mount fstab stanza looks like this:
"/mnt/SOURCE/dir1 /var/DEST/ none bind 0 0"
