New Music simply lists the last X albums based on file modification time. You can't clear the list, but there is a setting at Settings > My Music > New Music Limit to set the number of albums to display.
Because it's ordered by the time modified, albums will "bubble" to the top if you edit tags and allow the file modification time to be changed. Some tag editors let you to maintain old the modtime of files as you update them.
