Volume setting - you can set a level on the amp & vary the volume in the
Logitech controller Now Playing screen.  You'd have to experiment!

Hard drive - plugged into RPi, then I think you might need a hub -
again, I don't really know.

Are the Rpi's going to be wifi or ethernet?  If wifi, some people have
reported problems with noise on the analog output.  You could add a usb
stereo output unit as an alternative.

Your music would be self-contained, but radio is partially dependent on
an active mysb.com link  It's complicated to explain.
I can't really advise on Pandora - it's not available on my system.

Maybe others can advise on these issues too?
