Actually it is.
I've edited the */usr/local/sbin/config.cfg* file to remove the "_IP"
from the end of SERVER_IP" and done the same in the
*/usr/local/sbin/set_server.sh* file. I've then saved the files back to
the permanent file system using:
SUDO FILETOOL.SH -B
A side benefit is that the server IP now appears in the SqueezeLite
settings menu where it didn't before:

7) Change Codec (Current Codec restriction is: )
8) Change Server (Current Server is: -s 192.168.x.xxx)
9) Change Priority level (Current Priority level is: )
11) Change Upsample settings (Current Upsample setting is: )
12) Make a backup of your Changes
13) Return to MAIN menu
