The main benefit is that it makes it somewhat easier to use your RPi for
other things at the same time.
In this case you would boot your RPi using Raspberry Pi OS (formerly
known as Raspbian) and install whatever you like ... then people try to
install LMS on top and they might have problems in working out how to
install a modern version or might have conflicts with other applications
regarding pre-requisites (like bits of Perl).
By installing Docker and running an LMS Docker it makes it easier to get
running and remains largely self-contained (because it comes with what
it needs).

However, you may well then get other issues - like extra ports required
by bridges that were not allowed for in the Docker image (I don't know
if this is a problem but could imagine it might be).
