As I didn't want to wait any longer for the NUC11 to become available (again) and also didn't want to pay these ridiculously high prices for the NUC10, I finally got my hands on a fairly priced and reasonably recent NUC i3 (8th Gen) with 8GB of RAM. The plan is to run the latest Ubuntu LTS (20.4). Is there any reason not to install a graphical interface? Would it drastically slow down things? And if not, which one should I use? Again, no real preferences from my side. I'm grateful for your insights.
