I don't understand your experience with the HiFiBerry OS, I have used it
several times without a problem

However, I suggest you try a copy of

(https://downloads.raspberrypi.org/raspios_lite_armhf/images/raspios_lite_armhf-2021-11-08/2021-10-30-raspios-bullseye-armhf-lite.zip)

Install the overlay and squeezelite and see if the board is recognised
